Jo\u00e3o not only grilled for us, but also gave me a&nbsp;<strong>private lesson<\/strong>&nbsp;on traditional Brazilian grilling techniques. It added so much energy and authenticity to the entire experience.<\/p>\n<p style=\"color: #000000; font-family: 'Times New Roman'; font-size: medium;\">Meanwhile, my husband crafted&nbsp;<strong>Caipirinhas<\/strong>, Brazil\u2019s national cocktail. He learned how to make them during our first trip in 2008, right after we visited a&nbsp;<strong>Cacha\u00e7a distillery<\/strong>&nbsp;with my uncle. Its thick fat cap helps it retain juiciness and imparts an unbeatable flavor. I found a beautiful Picanha roast at a local Brazilian store (sourced from Australia!) and put everything I learned from Jo\u00e3o into practice at home.<\/p>\n<h4 style=\"color: #000000; font-family: 'Times New Roman'; font-size: medium;\">Ingredients:<\/h4>\n<ul style=\"color: #000000; font-family: 'Times New Roman'; font-size: medium;\">\n<li>1 Picanha roast, sliced into 1.5-inch steaks (about 3.75 cm)<\/li>\n<li>Maldon salt or Kosher salt, to taste<\/li>\n<\/ul>\n<h4 style=\"color: #000000; font-family: 'Times New Roman'; font-size: medium;\">Preparation:<\/h4>\n<ol style=\"color: #000000; font-family: 'Times New Roman'; font-size: medium;\">\n<li>Slice the Picanha roast into 1.5-inch steaks. Fold each steak in half into a C-shape, with the fat cap on the outside.<\/li>\n<li>Skewer each piece through a&nbsp;<strong>metal espeto<\/strong>&nbsp;(Brazilian skewer).<\/li>\n<li>Heat your grill to&nbsp;<strong>500\u00b0F (260\u00b0C)<\/strong>.<\/li>\n<li>Grill the skewers, flipping every 2\u20133 minutes to ensure even cooking.<\/li>\n<li>Cook to your preferred doneness\u2014<strong>medium-rare<\/strong>&nbsp;is my go-to.<\/li>\n<li>Let the meat rest briefly, then slice directly off the skewer for an authentic Churrasco experience.<\/li>\n<\/ol>\n<div><span style=\"font-family: Times New Roman; font-size: medium;\">&nbsp;<\/span><\/div>\n<hr style=\"color: #000000; font-family: 'Times New Roman'; font-size: medium;\">\n<h3 style=\"color: #000000; font-family: 'Times New Roman';\">Staying Connected Through Food<\/h3>\n<p style=\"color: #000000; font-family: 'Times New Roman'; font-size: medium;\">Since coming back home, I\u2019ve continued experimenting with Churrasco techniques and remain in touch with Jo\u00e3o.
